Seriously these oatmeal cookies are delicious! Try the recipe. They are so soft, moisture, and full of flavors. I love baking and I like to bake when I need to relax. The other day I was quite busy and I needed to turn off for a while so I was baking. I was thinking about what to bake…something healthy that also tastes good… so I tried and ended up with some delicious oatmeal cookies.
- 1 1/2 cups self-raising flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1 cup organic jumbo wholegrain oats
- 1 egg-lightly beaten
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 pears + 1 apple – cleaned and shredded
- 1 ripe mango-diced + 1 lime-juice and zest
- 1 ripe banana-mashed + 1 peach-diced
Preheat oven to 375 degrees F.
In a bowl, combine the dry ingredients. In a separate bowl, combine the wet ingredients, then add to the dry ingredients until just mixed. The mixture will be dry, don’t worry it will be fine once you add fruit. Split the mixture into 3 bowls. In one bowl stir in the pears and apple, in the second bowl stir in the mango and lime, and in the last bowl stir in the banana and peach.
Drop cookie dough onto your baking sheet spacing about 2 inches apart, with each cookie around 2 tablespoons of dough. Bake for 13-15 minutes at 375 degrees F.
Tips: pear and apple oatmeal cookies would go perfect with chopped walnuts. If you have some, add them to the mixture. You can also substitute pears, apple, mango, lime, banana and peach with any other fruit you like better.
