I love avocado. I can eat it all day long. Today I wanted to try something new for breakfast so I made myself scrambled eggs with avocado. It was delicious! You should try it, too. If you are looking for a healthy breakfast, try scrambled eggs with avocado. This delicious breakfast is full of protein and healthy fat.
- 2 medium/large eggs, preferably free-range
- 1 ripe avocado, peeled and mashed
- a slice of organic rye bread
- plum tomatoes
- salt and freshly ground black pepper
- extra virgin olive oil
Beat the eggs in a bowl. Heat the oil in a non-stick frying pan. Pour in the eggs and stir gently from the outside of the pan to the center until starting to set. Take your pan off the heat and stir through mashed avocado. Pile the eggs onto the bread. Season with salt and freshly ground black pepper. Decorate with plum tomatoes.
